Beet-Orange Salad With Ricotta

For people on a diet, but still would like to enjoy a delicious meal or snack, you might find this recipe fits the bill perfectly. It’s delicious, and nutritious at just 132 calories.


1 1/2 pounds medium beets

2 navel oranges

1 1/2 tablespoons extra-virgin olive oil

Pinch of salt

Pinch of pepper

2 cups baby arugula

1/4 cup part-skim ricotta cheese

Caraway seeds      

Serves 4


Peel the beets and cut them into wedges. Put them in a large sauce pan, cover them with water, and boil. Reduce heat, and let them simmer for 15 minutes or until tender. Drain. Grate 2 teaspoons orange rinds. Peel and section the oranges. Set aside 2 tablespoons of juice. Mix orange rind, juice, olive oil, and a pinch of salt and pepper. Place ½ cup arugula on each of the 4 plates. Divide the beets and orange sections among the 4 plates. Drizzle with dressing on top each serving with 1 tablespoon ricotta; sprinkle with caraway seeds.
