Thai Pizza

1 pizza crust
1/3 cup rice wine vinegar
3 tbsp soy sauce
3 tbsp chunky peanut butter
2 tbsp lime juice
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1/4 tsp black pepper
1/4 tsp red pepper, crushed
1/2 lb medium shrimp, peeled
1 tbsp cornstarch
1/3 cup water
1 cup mozzarella cheese, shredded
1/2 cup red bell pepper, chopped
1/2 cup baby corn, sliced
1/4 cup green onions, sliced
2 tbsp fresh cilantro or coriander, chopped

1. Place pizza crust on a flat surface.

2. Preheat oven to 450ºF.

3. Combine rice wine vinegar, soy sauce, peanut butter, lime juice, garlic, singer, black pepper, and red pepper in a 2-cup glass measure. Stir to throughly combine.

4. Spray large skillet with nonstick cooking spray. Heat over medium high heat until hot.

5. Add shrimp and cook for 5 to 7 minutes, stirring occasionally, or until shrimp turn pink and opaque. Transfer cooked shrimp to a small bowl.

6. Add vinegar mixture to same skillet and bring to a boil. Reduce the heat to medium and simmer for 3 to 4 minutes, or until slightly thickened.

7. Combine cornstarch an water in a small bowl and stir until smooth. Add the cornstarch mixture to the vinegar mixture in skillet and simmer for about 5 minutes or until thickened.

8. Remove skillet from heat. Sprinkle cheese over the dough. Spread the vinegar mixture evenly over the cheese. Top with shrimp, bell pepper, baby corn, and green onions.

9. Bake the Thai Pizza for 18 to 20 minutes or until the crust is golden brown and cheese is melted. Once cooked, sprinkle with cilantro.
