Rice-Crusted Pizza

This pizza style has a unique-tasting crust. Adding a little Oriental twist to the pizza dough creates a big difference to this recipe!

2 cups cooked short-grain brown rice
2 eggs
1 cup low-fat mozzarella cheese, grated
2 cups basic pizza sauce
safflower oil to coat baking sheet
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 cup sliced marinated artichoke hearts
1/2 tsp minced garlic
1/4 cup grated Parmesan cheese
1/4 cup sliced pitted black olives

1. Preheat oven to 450ºF. Lightly oil a large baking sheet.

2. In a large bowl, mix together rice, eggs, and mozzarella, to create a dough.

3. Once done, place the dough on the baking sheet and create a pizza crust using a rolling pin and shaping it with your hands.

4. Place the crust in the oven and bake lightly for 15 to 20 minutes.

5. In a large bowl, combine pizza sauce, oregano, basil, and garlic. Spoon the mixture over the baked crust.

6. Top the pizza with Parmesan cheese, artichoke hearts, and olives. Bake it for 10 more minutes before serving.
